Chocolate Almond Butter Rice Krispie Treats

With school starting up pretty soon, I keep getting flashbacks  to when I was a kid and my mom would let us go with her to the store to pick out snacks for school.

You guys hate me now, don’t you? I’m sorry! I had to reminisce.

The one snack I used to LOVE was Rice Krispies. Y’all… those are amazing and delicious and sticky and sweet… you get it.

But (sigh), now, we live in a different world. We are “adults”.

I don’t know about you guys but for me, personally, I’m trying to live a healthier life and that means no artificial foods filled with who knows what (no matter how good they taste 😔). Plus, being gluten-free, that’s a no on A LOT of stuff I used to eat, including Rice Krispies.

I know they have made alternatives that are gluten-free but… they’re just not as good and that sucks! Many times, I find myself making homemade versions of things I want to eat but can’t (like popsicles and cookies).

The fun thing about this, though, is that I can create my own version of things like these Chocolate Almond Butter Rice Krispie Treats. While I’m not the biggest fan of chocolate by itself, chocolate and some sort of nut butter are one of my favorite food combos! (Reese’s anyone?)

So, why not combine one of my favorite food combos and one of my favorite childhood snacks and make something amazingly delish? Well, I did it and I have #noregrets. I’m living my best life!!!

Chocolate Almond Butter Rice Krispie Treats

Makes 16 squares 

Ingredients:

Prep and measure your rice puffs.

Take your honey, almond butter and coconut oil and put it into a heat-safe bowl. Using the microwave, in small intervals, melt the mixture down until it’s all combined together. Whisk in the rice syrup once it’s cooled down a bit.

Pour your wet mixture into the bowl of rice puffs and mix it all together. Make sure to not let it cool down too much before you mix it all together because it will be harder to handle.

While the rice puff mixture cools down (about 3-5 minutes), get your chocolate chips ready and stir them gently.

The FUN and STICKY part!

Line an 8×8 pan with parchment paper and scoop in the rice krispie mixture. Using a second piece of parchment paper, press down until flat and even in the pan. If you’re totally cool with getting a little sticky and dirty, use your hands!
Place in the freezer for at least thirty minutes to set. I’m serious about the 30 minutes! (Am I?)

Remove from the freezer and cut the treats into nine large squares or twelve smaller ones.

How I would eat them:

Turn on some Tom & Jerry and eat one of these bad boys. Trust me… You’ll feel like you’re 6 all over again!

Crafty Tip:

  • If you’re wanting to eat a traditional Rice Krispie, melt down a bag of marshmallows with some melted butter and the rice puffs.
  • Not into almond butter? Switch it out for another butter, such as, peanut butter or cashew butter.
